Pizza Overload

That’s DD drooling over the Manhattan Meat Lovers from Yellow Cab :D we feasted on 3 boxes of 18″ pizza of different flavors last weekend when we visited DH’s relatives together with the Balikbayans and had long kwentuhan catching up on each others lives. Now, I am craving for more this time as I only ate 1 1/2 slices  due to mouth sores then. Ahahaha.

Gave In

I am now in second week of less rice diet, I am proud to say that I was able to resist the urge to take a second or third round of rice serving during meal times, it feels good to have a light tummy. Sweets are moderated too! but  then again, I was not able to resist when DH took home a slice of blueberry cheesecake that they made on their baking class.

Now I need to research more on diets that work! since there  are more yummy cake recipes that they made and I was really craving for all of them. :D Oh well, I guess it wont hurt to gave in once in awhile right?!

Saturday Break

DH and I decided last weekend to take the kids out and treat them to their favorite pizza parlor, as usual they are in their best appetite as they were able to finish all the foods served to them, their most favorite part is having their sundaes’ the little boy loves the strawberry flavor, while DD wants the chocolate one.

We went around the mall after looking around, we were able to buy some things for the house and and a wall fan for our room as the stand fan that we have is as good as a junk already. :D But what excites DH is the  Best Buy deal that we had, a Toshiba 24″ wide screen LCD TV not at the mall but from his cousin who went home from the states. She sold it to us at a very affordable price ;) Now kids are enjoying their favorite Spongebob show at a more bigger screen.

Craving Again

DH cooked this yummy Carbonara for the 10th year death anniversary of his Mom. We just had this yesterday and I am now craving for it again. :D We went to the Himlayang Pilipino together with my SIL’s family and the kids of DH’s brother. We went there at around 2 p.m, a sunny and hot weather greeted us, but nothing stopped us in enjoying our stay there, as expected there was endless chit chat and catching up on each other after we prayed the novena for the dead. Many topics have been brought up and that includes gossips, business , etc. etc.. And while we were all busy talking to each other, an agent (we supposed) approached us and started discussing about insurance and others. He even handed us a term life insurance quotes. Oh well, this agent kinda scared most of my companions. Talk about the place where we are and there he is discussing about death and everything. He must have been thinking of the perfect place and timing. :D

Cheese Cake Recipe

I am a cake lover but I don’t know how to bake and I am no good cook, but glad that DH is a great one and can grant all my wishes when it comes to my food cravings. :D DH has been keeping an Easy Recipes book that he got from his late mom whose a good cook too. I’ve been requesting DH to make me a blue berry cheesecake, glad that he granted it and I know it has been so long since DH made this for my birthday last month ,the photos I uploaded from Flickr gained requests that I post the recipes of the cheesecake, so here it is… Pardon the long delay of posting it here. :)

Ingredients

For the Crust:

1 pack  Graham cracker crumbs
1/2        cup sugar
1 cup    melted anchor butter

Cheesecake Filling

2boxes                     Philadelphia cream cheese
2/3 cup                     water x2
4 tbsp/ envelopes   Knox gelatin
4 pcs.                        eggyolks
2 1/2 cup                 evaporated milk
3/4 cup                    sugar
2                                Magnolia cream cheese (softened)
4                               egg whites
1/2 cup                    sugar
3                               Magnolia all purpose cream

Procedure

For Crust

  • Combine all ingredients until well blended
  • Press in a pie pan or any container with flat surface of you choice
  • Chill in the fridge until set

For the Filling

  • Pour in two 2/3 cups of water in sauce pan, put 4 envelopes of gelatin, pour in 4 eggyoks, 2 1/2 cups of evaporated milk and 3/4 cups sugar, stir over low heat until gelatin dissolves, stir well. Set aside.
  • Beat cream cheese, sugar in large bowl with electric mixer at medium speed until well blended. Beat in whipped topping. Add dissolved gelatin in steady stream while beating at low speed. (Mixture will become loose and lumpy.) Beat 4 minutes at medium speed until smooth and creamy, scraping side of bowl occasionally
  • Spread cream mixture thickly over the crust.
  • Chill in the fridge until it is set.
  • Then pour in the Blueberry or any fruit flavored toppings of your choice.
